{"id":13,"date":"2009-01-31T21:37:07","date_gmt":"2009-01-31T08:37:07","guid":{"rendered":"https:\/\/www.foursistersfood.com\/?p=13"},"modified":"2009-02-18T17:27:37","modified_gmt":"2009-02-18T04:27:37","slug":"panzanella","status":"publish","type":"post","link":"https:\/\/www.foursistersfood.com\/?p=13","title":{"rendered":"PANZANELLA"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>About half a loaf of Ciabatta or similar bread<\/p>\n<p>Olive oil to toss with bread<\/p>\n<p>2 cloves garlic, crushed<\/p>\n<p>4 anchovy fillets<\/p>\n<p>1 Tablespoon capers<\/p>\n<p>1\/2 teaspoon salt<\/p>\n<p>Ground pepper<\/p>\n<p>5 Tablespoons good quality olive oil<\/p>\n<p>1 Tablespoon red wine vinegar<\/p>\n<p>Sweet yellow, red or orange pepper, seeded and diced<\/p>\n<p>Seeded and cubed English cucumber<\/p>\n<p>2 vine or meaty tomatoes<\/p>\n<p>1 small red onion, peeled, halved and sliced<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Preheat oven to 200 degrees<\/p>\n<p>Tear the bread into bite sized pieces, toss with olive oil. Place on a baking sheet and bake in oven until lightly browned. Remove and set aside.<\/p>\n<p>Mash the garlic, anchovies and capers to a pulp in a mortar and pestle, or blend in a blender. Put in a large work bowl.<\/p>\n<p>Add the salt and pepper, olive oil, and vinegar and blend thoroughly. Add the bread, pepper, cucumber, tomato and onion and toss gently to coat in the dressing.
