{"id":210,"date":"2009-04-12T15:24:00","date_gmt":"2009-04-12T02:24:00","guid":{"rendered":"https:\/\/www.foursistersfood.com\/?p=210"},"modified":"2009-04-12T15:24:00","modified_gmt":"2009-04-12T02:24:00","slug":"squashed-baked-potatoes","status":"publish","type":"post","link":"https:\/\/www.foursistersfood.com\/?p=210","title":{"rendered":"SQUASHED BAKED POTATOES"},"content":{"rendered":"<p>Whatever you do, avoid the dumb blonde potato Nadine.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 potato per person, preferably Agria or any other\u00a0type suitable for baking and roasting.\u00a0<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Preheat oven to 200\u00b0C (400\u00b0F) fanbake<\/p>\n<p>Using a pointed knife, prick each potato several times on each side.\u00a0 Microwave the potatoes for about 3 minutes per potato, or until 90% cooked.<\/p>\n<p>Put potatoes on a baking tray which has been lined with cooking paper,\u00a0leaving plenty of room between them.\u00a0 Squash each potato with a potato masher.\u00a0 The flatter the potato, the crispier it will end up.\u00a0 Brush each potato with rice bran oil, or vegetable oil.\u00a0 I find using a pastry brush works best.\u00a0 Grind some coarse salt on each potato.\u00a0 Bake for about 25 minutes or until golden and crisp.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"attachment wp-att-211 alignleft\" src=\"https:\/\/www.foursistersfood.com\/wp-content\/uploads\/2009\/04\/p1000379.jpg\" alt=\"Squashed potatoes\" width=\"600\" height=\"450\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Whatever you do, avoid the dumb blonde potato Nadine.
