{"id":226,"date":"2009-04-12T18:07:16","date_gmt":"2009-04-12T05:07:16","guid":{"rendered":"https:\/\/www.foursistersfood.com\/?p=226"},"modified":"2009-04-12T18:18:29","modified_gmt":"2009-04-12T05:18:29","slug":"fish-pie","status":"publish","type":"post","link":"https:\/\/www.foursistersfood.com\/?p=226","title":{"rendered":"FISH PIE"},"content":{"rendered":"<p>Although I have not been a practicing catholic for many years, I still\u00a0feel guilty if I\u00a0eat meat on Good Friday so this is what we had this year.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>5 large mashing potatoes, peeled and diced<\/p>\n<p>Salt and freshly ground pepper<\/p>\n<p>2 eggs<\/p>\n<p>1 bag baby spinach<\/p>\n<p>1 onion, finely chopped<\/p>\n<p>1 carrot chopped<\/p>\n<p>2 T butter<\/p>\n<p>1\/3 C \u00a0flour<\/p>\n<p>2 C milk<\/p>\n<p>1 C grated mature cheddar cheese<\/p>\n<p>Juice and zest of 1 lemon<\/p>\n<p>1 t English mustard<\/p>\n<p>1 bunch flat leaf parsley, finely chopped<\/p>\n<p>200g (\u00bdlb) skinless white fish such as gurnard or terakihi<\/p>\n<p>300g\u00a0(2\/3 lb) smoked fish, like trevally, flaked<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Preheat the oven to 200\u00b0C (400\u00b0F)<\/p>\n<p>Cook the potatoes in salted boiling water for about 15 minutes until cooked.\u00a0 Drain.\u00a0 Hard boil the eggs, when cool peel and quarter them.\u00a0 Wilt the spinach in a pot of boiling water for about 2 minutes, then drain in a colundar and squeeze out any excess water.<\/p>\n<p>In a large pot, melt the butter then add the onion and carrot and gently fry for about 5 minutes until soft.\u00a0 Add the lemon\u00a0zest then mix in the flour and cook for a further minute.\u00a0 Add the milk slowly and stir continuously until thickened and boiling.\u00a0 Remove from the heat and add the cheese, lemon juice, mustard and parsley.\u00a0\u00a0 Check the seasoning and add salt if necessary.<\/p>\n<p>Put the spinach, fish and eggs into a casserole dish and mix together.\u00a0 Pour over the sauce and poke with the handle of a wooden spoon to get the sauce to penetrate to the bottom of the dish.\u00a0 Mash the potatoes with some olive oil, salt and pepper.\u00a0 If too thick, mix in some milk.\u00a0 Spread over the fish and sauce.\u00a0 Rough up with a fork then bake in the oven for about 30 minutes until browned and bubbling.<\/p>\n<p>Serves 6<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"attachment wp-att-227 alignleft\" src=\"https:\/\/www.foursistersfood.com\/wp-content\/uploads\/2009\/04\/p1000392.jpg\" alt=\"Fish pie\" width=\"600\" height=\"450\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Although I have not been a practicing catholic for many years, I still\u00a0feel guilty if I\u00a0eat meat on Good Friday so this is what we had this year.
